Most recipes calling for phyllo use several layers of it, so it is not too serious if one sheet splits. Successive layers will cover any little tears. Unused phyllo can be stored in the refrigerator for several days.
Wrap it first in plastic, then with a damp towel to keep it moist. Traditional sweet pastries that contain nuts, sugar and dried fruit freeze well, but dairy products, such as mascarpone and ricotta, tend to separate when frozen, and vegetables may darken or become soggy.
